White Bean Hummus Wrap, Compliments of Sarah Glassman-owner of Vine Dining


2 1/2 C white beans

2 cloves garlic, minced

3 TBSP olive oil

1/4 TSP sea salt

1/3 C water


1 cucumber

1 tomato

1/4 C cabbage

1 medium carrot

1/2 avocado

1 lemon, juiced

2 TBSP olive oil

salt and pepper to taste

4-6 flour tortillas


Place all hummus ingredients in a food processor or blender

Blend until smooth

Slice cucumber

Slice tomato

Slice pepper

Shred carrot with a grater

Add vegetables to a medium bowl and mix with lemon juice, oil, and salt and pepper

Spread 2 TBSP hummus onto wrap

Layer with vegetables

Fold bottom of tortilla, then roll the wrap the opposite way to create a wrap

Cut in half and enjoy
